Cherry Selection: 95% fully ripe cherries, 5% semi-ripe
Anaerobic Fermentation: Careful pulping, preserving a high proportion of mucilage attached to the bean
Drying: Slow and controlled drying, with regular turning, until optimal moisture content is reached; a gradual process that preserves clarity and balance in the cup profile
Packaging & Stabilization: Coffee packed in GrainPro bags and stabilized for 15 days
